A labour of love

Every 2-3 days we spend a few hours in the cheese cave giving our wheels some TLC. Since all of our cheeses feature either a natural or washed rind, we need to regularly flip, wipe and/or wash the wheels to ensure proper growth of a protective and flavourful rind.

It’s a labour intensive process - and it’s a good workout too! Each wheel weighs between 12 and 14 kg and needs to be lifted from the shelf, flipped, and then placed back to rest on its other side.

This is artisan cheesemaking. It is attention to detail, adjusting processes to suit each cheese, and personally handling each wheel tens or hundreds of times before it reaches our customers. It’s what makes artisan cheese making so unique, so special, and so incredibly personal. YOU get to enjoy the cheeses produced right here on our farm, made with milk from our very own cows, and created and tended to by our own cheesemaking/farming family.
